My family loves this Lobster Mac ‘n Cheese recipe. It is adapted from Weight Watchers One Pot Cookbook. It is fairly easy and you can alter some ingredients to adjust the flavor.
1 Tablespoon Unsalted Butter
2 Tablespoons Flour
1 can Fire Roasted Tomatoes (2 cans if you like it extra saucy)
1 cup Reduced-fat Sharp Cheddar Cheese, Shredded
⅓ cups Parmesan Cheese, Shredded
½ cups 1% Milk
⅛ teaspoons Ground Mustard
¼ teaspoons Black Pepper
1 teaspoon Parsley Flakes
3 cups Noodles Of Your Choice, Cooked
¾ pounds Lobster Meat, Cooked And Chopped (I use the imitation lobster if I’m in a hurry and I use 2 packs)
In a large skillet on medium/high heat, melt the butter and then stir in the flour. Keep stirring the roux for about 30 seconds and then add in the tomatoes. Stir and cook the mixture for about 1 minute.
Add in the cheeses, milk, ground mustard, pepper, and parsley and stir until the cheese is melted and smooth. Pour in the noodles and lobster and mix until everything is well blended. Top with fresh parsley.
